Cookie Mom-ster

To say I love baking cookies would be an understatement. I REALLY love baking them! Over the years, I am sure I have baked thousands of them. There is a special joy in sharing homemade goodness by the handful – no fork required, no dishes to wash! My favorite cookies to bake are my grandmother, Ruth DeBerry’s, chocolate chip cookies. It took years to perfect her recipe, but I finally did. I bake her recipe (and variations of it) so often, that I do not even need the recipe card! And as an honor to her legacy, I have baked them on her birthday and shared memories of her with my children for 27 years and counting.

DOWNER ALERT: As much as I enjoy making her chocolate chip delights, I never share them with the dogs. Since you are reading this blog, you are likely a dog owner that NEVER feeds your dog chocolate. Because it contains theobromine (a caffeine-like drug) and caffeine, it is poisonous to dogs. They cannot metabolize and eliminate it like humans. Side note – the darker and more bitter the chocolate, the more theobromine it is likely to contain. If you suspect your dog has eaten chocolate, please call the Vet, and watch for these symptoms: vomiting, diarrhea, panting, restlessness and a fast heart rate.

Why did I share this “spot of sunshine”? Because the cooking holidays are approaching, and you may be making treats. The chance of some chocolate beaconing and tempting your four-legged friend is growing exponentially. With all the baking you may do, why not make a special treat just for the dog? Mine LOVE peanut butter treats, so I am sharing this simple recipe from Damn Delicious. “Bone-appetit!”

HOMEMADE PEANUT BUTTER DOG TREATS

prep time: 25 MINUTES cook time: 25 MINUTES total time: 50 MINUTES

The easiest homemade dog treats ever – simply mix, roll and cut. Easy peasy, and so much healthier than store-bought!

INGREDIENTS:

  • 2/3 cup pumpkin puree
  • 1/4 cup peanut butter
  • 2 large eggs
  • 2 1/2 – 3 cups whole wheat flour

DIRECTIONS:

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside.
  2. In the bowl of an electric mixer fitted with the paddle attachment, beat pumpkin puree, peanut butter and eggs on medium-high until well combined, about 1-2 minutes. Gradually add 2 1/2 cups flour at low speed, beating just until incorporated. Add an additional 1/4 cup flour at a time just until the dough is no longer sticky.
  3. Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Using a rolling pin, roll the dough to 1/4-inch thickness. Using cookie cutters, cut out desired shapes and place onto the prepared baking sheet.
  4. Place into oven and bake until the edges are golden brown, about 20-25 minutes.*
  5. Let cool completely.

NOTES:

*Baking time will vary depending on the size and thickness of the treats. Serving size will also vary depending on the desired shapes and cookie cutters used.
